  1. Dice mango, salt and set aside
  2. Finely mince garlic and bloom in olive oil
  3. Add harissa paste and cook for 2
  4. Add the spices (seeds before powder), mix well and bloom
  5. Add Mango, mix well and cook for 5 mins on medium
  6. Add water, vinegar and sugar, stir well and bring to a rolling boil
  7. Put lid on, lower heat to medium and let simmer for 12 mins
