Neapolitan pizza dough

Method

  1. Add water to a bowl, dissolve salt, add 10% of the total amount of flour and mix well
  2. Dissolve yeast and then gradually mix in the remaining flour super super gentle (takes about 10 minutes)
  3. Knead the dough for about 20 minutes
  4. Cover and let it rise for 2 hours at room temperature
  5. Divide it in (when making more than one) and form dough balls
  6. Let them rise in an airtight container for 4-6 hours
