Ingredients
- 1 large mango (~700 g with core)
- 2 cloves garlic finely chopped
- 2 tsp harissa paste
- 1 Tsp mustard seed
- 1 Tsp fenugreek seeds
- ½ Tsp cumin seeds
- ½ Tsp coriander seed
- 1 Tbsp turmeric powder
- 1 Tsp sweet paprika
- 2 Tbsp brown sugar
- 230 ml water
- 2 Tbsp apple cider vinegar or white vinegar
- 1 Tbsp olive oil
- Pinch Salt
Method
- Dice mango, salt and set aside
- Finely mince garlic and bloom in olive oil
- Add harissa paste and cook for 2
- Add the spices (seeds before powder), mix well and bloom
- Add Mango, mix well and cook for 5 mins on medium
- Add water, vinegar and sugar, stir well and bring to a rolling boil
- Put lid on, lower heat to medium and let simmer for 12 mins
