Caponata
Ingredients
- 2 large aubergines
- 1 onion
- 1 tin tomatoes
- 2 cloves of garlic
- 1 celery
- 12 green olives
- 2 tbsp capers
- 3-4 tbsp pine nuts
- 2 tbsp raisins
- Red wine vinegar
- 2 pcs. grilled and pickled red bell peppers
Method
- Cut aubergine in large chunks and salt
- Caramelize onions
- Cook tinned tomatoes with garlic until reduced to a paste
- Blanch celery
- Soak raisins in red wine vinegar
- Mix everything
