Ingredients
Noodles
- Shengmian (生面) Noodles, 400g
Seasoned soy sauce
- Light Soy Sauce (生抽), 3 tablespoons
- Sugar, 1.5 tablespoons
- Dark Chinese Vinegar (陈醋), 1 tsp
Sauce
- Seasoned soy sauce, 2 tablespoons
- Chili Oil (红油), 2 tablespoons plus more to serve
- Sesame Paste (芝麻酱), 1 tablespoon
Meat
- Pork Mince (猪肉碎) 100g
- Cornstarch (生粉), ½ tsp. To marinate the pork mince.
- Sesame Oil (麻油), ½ tsp. To marinate the pork mince.
- Liaojiu (料酒), ½ tsp to marinate the pork mince
Topping
- Sichuan Peppercorns (花椒), ½ tsp of whole peppercorns. Toast and grind these up
- Sichuan Yacai (芽菜), ~3 tbsp
- Green Onions (葱). Sliced – optional for garnish.
Method
- Mince up and marinate the pork for 10-15 minutes
- Toast and Grind the Sichuan peppercorns
- Heat up the soy sauce, sugar, vinegar. Add hong you and sesame paste and build the sauce
- Stir-fry the Yacai and the Pork to make the topping
