Ingredients
- 125 g flour tipo 00
- 70% cold water (87,5 g)
- 3% salt (3,75 g)
- 0,25% fresh yeast (0,3 g)
Method
- Add water to a bowl, dissolve salt, add 10% of the total amount of flour and mix well
- Dissolve yeast and then gradually mix in the remaining flour super super gentle (takes about 10 minutes)
- Knead the dough for about 20 minutes
- Cover and let it rise for 2 hours at room temperature
- Divide it in (when making more than one) and form dough balls
- Let them rise in an airtight container for 4-6 hours
